Re-using stock pistons w/ new rings
Having never rebuilt an engine before, this question may come across as stupid... but... is it possible when rebuilding a motor to hone the cylinders and use a standard sized (or oversize?) ring set on the pistons that were already in the motor?
Would this cause any problems under high-boost applications?

Yes it can be done, it's done every day of the week. Obviously it's not the preferred solution, but often it is the most suitable.
It's best to have the bores and pistons measured to check for wall clearance. This will determine it's suitability in a performance application.
As howy says, it's done all the time. But you should mike the pistons and the cylinders to ensure everything is in spec. There will also be a spec for ring side gap (gap between ring side and piston ring groove), and this is usually a good guide to piston condition.
Another thing to come to mind, is Toyota has different sized piston's, ranging from 82.910mm up to 82.951, which is bugger all, but still something to note.
This can be found by looking on the underside of the piston where it will have a number stamp, if you end up going ahead and need slightly larger pistons, I have 6 factory units sitting in the shed collecting dust with the other 7m crap .
Also, bore sizes (factory spec) can be found by looking at the bottom of the block, just back from where the oil pump bolts on, there is a 6 digit number, with the first number being for cylinder 1 and the last for cylinder 6.
Stop being a tight ar$e and buy a 2jz 6spd, or get some forgies
