They're not super-duper common, because for something "interesting" to be under $1k your definition of "interesting" has to coincide with pretty-much everyone else's definition of "shitbox".
F'rigzample if I had somewhere to put it, I'd quite like a very early Volvo 245DL with the 4spd+O/D and round headlights that frankly look fugly-but-period. These can still be had for this <$1k in great nick (very rarely - they pop-up maybe once every 6 months), 'cos most of you guys think it's a total POS (and frankly you're not that far off). Of course I'd prefer a 145 with the split rear windows, but they're too rare & I'd be looking at closer to $5k for a good one of those.
