I changed it to 'Parading Toast' for lack of a better idea, it will probably change to something stupid everyday for a while now! I sent them back a letter letting them know how I feel about it, they probably won't even write back though.

i'd suggest you prominently display their letter and your response on the site.
And fling off a press release to any/all newspapers - it only to (ever so briefly) shame the cock-smoking lawyers.
fwiw: until you get hit with an actual writ (which will have cost them in the vicinity of $5000 in legal leg work - civil action in the supreme court is expensive to initiate) the letters to-and-from you and telstra are just smoke signals - essentially meaningless and without any significant legal force.
fwiw 2: until they rock up with a order (which will have cost them thousands more) from the judge forcing you to change the name you can legally continue to ignore them.

You are on the right track in terms of 'past use' (as this is how they would have managed to register TP in the first place to overcome the generic element - see my earlier post) but neither the TP or anyone else could register "Cars under $5000" as it is a descriptive term
However, 'Prior art' is in relation to designs and patents but you have the reasoning right though
